Ingredients

2 cups of fresh strawberries, hulled and diced

1/2 cup granulated sugar

1 cup heavy whipping cream

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 cup crushed graham crackers (for topping)

Fresh mint leaves (for garnish)

Instructions

Prepare the Strawberries: In a mixing bowl, combine the diced strawberries with 1/4 cup of granulated sugar. Mix well and let it sit for about 10-15 minutes until the strawberries release their juices.

Make the Strawberry Mixture: Once the strawberries are ready, add lemon juice to the bowl. Gently fold the strawberries and their juices into the sweetened condensed milk to create a smooth mixture. Set aside.

Whip the Cream: In a separate large mixing bowl, use a hand mixer or stand mixer to whip the heavy cream until stiff peaks form, approximately 3-5 minutes.

Combine Mixtures: Carefully fold the strawberry mixture into the whipped cream, being gentle so the whipped cream remains fluffy. Add the vanilla extract and continue to fold until just combined.

Assemble the Cups: Spoon the strawberry ice cream mixture into individual serving cups, leaving some space at the top for toppings.

Chill: Place the filled cups in the freezer for about 4 hours or until they are set.

Serve: Before serving, sprinkle crushed graham crackers on top for added crunch. Garnish with fresh mint leaves and, if desired, a few extra strawberry slices.

Enjoy: Scoop out your delicious no-bake strawberry ice cream cups and enjoy this refreshing treat!
