8 oz elbow macaroni

4 cups chicken or vegetable broth

1 cup heavy cream

2 tablespoons unsalted butter

1 cup sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup crumbled goat cheese

1 cup diced salami

1 cup prosciutto, torn into pieces

1/2 cup black olives, sliced

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: sliced baguette for serving

Instructions
 

Cook the Pasta: In a large pot, bring chicken or vegetable broth to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Add the heavy cream and bring it to a simmer. Stir in garlic powder, onion powder, and season with salt and pepper.

      Add the Cheeses: Reduce the heat to low and gradually add the shredded cheddar and Gruyère cheeses, stirring consistently until melted and smooth. Fold in the crumbled goat cheese until fully incorporated.

        Combine: Return the cooked macaroni to the pot with the cheese sauce. Gently mix until the pasta is thoroughly coated in the creamy cheese mixture.

          Add Charcuterie Ingredients: Stir in the diced salami, torn prosciutto, sliced olives, and halved cherry tomatoes. Mix well to distribute the charcuterie goodies evenly throughout the mac and cheese.

            Garnish and Serve: Once everything is well combined, remove from heat and sprinkle with chopped fresh parsley. Let it sit for a couple of minutes before serving. Optional: Serve with slices of toasted baguette on the side for added crunch.
