2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded cheddar cheese (plus more for topping)

1 cup milk (whole, low-fat, or plant-based)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon dried thyme (optional)

1/4 cup grated Parmesan cheese (for extra flavor)

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3–4 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

    Add Rice and Broth: Add the uncooked rice to the pot, stirring to coat the rice with the onion and garlic mixture. Pour in the vegetable (or chicken) broth and bring to a boil.

      Incorporate Broccoli: Once boiling, lower the heat to a simmer and add the broccoli florets, paprika, salt, black pepper, and dried thyme (if using). Stir well to combine and cover the pot with a lid.

        Cook Rice: Let the mixture simmer for about 15–20 minutes or until the rice is cooked and has absorbed most of the liquid. Check occasionally to prevent sticking.
