12 oz (340 g) of penne pasta

1 tbsp olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

4 cups vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

1 cup fresh basil leaves, chopped

Fresh basil leaves for garnish (optional)

Sauté the Garlic: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Combine Ingredients: Add the canned diced tomatoes (with their juices), vegetable broth, penne pasta, Italian seasoning, salt, and pepper to the pot. Stir well to combine.

      Cook the Pasta: Bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
