12 oz (340 g) spaghetti or fettuccine

1 tablespoon olive oil

4 cloves garlic, minced

8 oz (225 g) mushrooms, sliced (cremini or button)

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

1 teaspoon red pepper flakes (optional for heat)

4 cups vegetable broth (or chicken broth)

1 cup heavy cream (or coconut milk for a dairy-free option)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (optional, or nutritional yeast for a vegan option)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, but be careful not to burn it.

    Add the sliced mushrooms to the pot and cook for about 5-7 minutes, stirring occasionally, until they are softened and browned.

      Stir in the dried thyme, red pepper flakes (if using), and a pinch of salt and pepper.

        Pour in the vegetable broth and bring the mixture to a boil. Once boiling, add the spaghetti or fettuccine. Stir well to ensure the pasta is submerged.

          Reduce the heat to medium-low, cover, and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

            Remove the pot from the heat and stir in the heavy cream and grated Parmesan cheese (if using) until well combined. Adjust seasoning with additional salt and pepper as needed.
