8 oz (225g) penne pasta

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (suggestion: cremini or button)

5 oz (140g) fresh spinach, roughly chopped

1 tsp dried thyme

1 tsp dried oregano

4 cups vegetable broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (plus extra for serving)

Salt and pepper to taste

1/4 tsp red pepper flakes (optional for some heat)

Fresh basil for garnish

Instructions
 

Prep the vegetables: Begin by washing and chopping the spinach, slicing the mushrooms, and dicing the onion. Mince the garlic as well.

    Sauté aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the mushrooms: Add the sliced mushrooms to the pot and cook for about 5 minutes until they release their moisture and begin to brown.

        Add the spinach and spices: Stir in the chopped spinach, dried thyme, dried oregano, and red pepper flakes if using. Cook for another 2-3 minutes until the spinach wilts down.

          Combine the pasta: Add the penne pasta to the pot, along with the vegetable broth and cherry tomatoes. Bring the mixture to a gentle boil.

            Simmer the pasta: Once boiling, reduce the heat to medium-low. Cover the pot and let it simmer for 12-15 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid has been absorbed.
