1 block (14 oz) firm tofu, pressed and drained

2 ripe peaches, pitted and diced

1/4 cup soy sauce

2 tablespoons maple syrup

1 tablespoon rice vinegar

1 teaspoon grated fresh ginger

1 garlic clove, minced

1 tablespoon sesame oil

1 teaspoon cornstarch dissolved in 1 tablespoon water (optional for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooking oil (for frying)

Instructions
 

Prepare the Tofu: Slice the pressed tofu into 1-inch thick cubes. Heat a non-stick skillet over medium-high heat and add a drizzle of cooking oil. Once hot, add the tofu cubes and fry until all sides are golden brown, about 8-10 minutes. Remove from skillet and set aside.

    Make the Peach Glaze: In the same skillet, add the diced peaches, soy sauce, maple syrup, rice vinegar, ginger, and garlic. Cook over medium heat, stirring occasionally, until the peaches are soft and start to break down, about 5-7 minutes.

      Thicken the Sauce (Optional): If you prefer a thicker glaze, add the cornstarch mixture to the skillet and stir continuously until the sauce thickens and coats the back of a spoon, about 1-2 minutes.

        Combine Tofu and Glaze: Return the fried tofu to the skillet with the peach glaze. Gently toss to ensure all the tofu cubes are coated with the delicious glaze. Allow the tofu to heat through for about 2 minutes.

          Garnish and Serve: Remove from heat and garnish the Peach Glazed Tofu with chopped green onions and a sprinkle of sesame seeds.
