2 ripe peaches, diced

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Fish:

1 lb white fish fillets (like tilapia or mahi-mahi)

2 tbsp olive oil

1 tsp chili powder

1 tsp cumin

1/2 tsp garlic powder

Salt and pepper to taste

For the Tacos:

Corn or flour tortillas (6-8)

1 cup shredded cabbage

1/2 cup crumbled feta or queso fresco (optional)

Lime wedges for serving

Prepare the Peach Salsa: In a mixing bowl, combine the diced peaches, red onion, jalapeño, cilantro, and lime juice. Mix well and season with salt and pepper to taste. Set aside to let the flavors meld.

    Marinate the Fish: In a small bowl, whisk together olive oil, chili powder, cumin, garlic powder, salt, and pepper. Coat the fish fillets evenly with the marinade. Let them marinate for about 15-20 minutes.
