Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup creamy peanut butter (or nut butter of choice)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon pure vanilla extract

1/2 teaspoon cinnamon (optional)

1 cup granola (store-bought or homemade)

1/2 cup mixed nuts (chopped, optional)

1/4 cup dark chocolate chips (optional)

Fresh fruit slices (such as banana or strawberries, optional)

Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, vanilla extract, and cinnamon (if using). Whisk the mixture until smooth and well combined.

Line the Baking Sheet: Line a baking sheet (approximately 9x13 inches) with parchment paper, ensuring it hangs over the edges for easy removal later.

Spread the Mixture: Pour the yogurt and peanut butter mixture onto the prepared baking sheet. Use a spatula to spread it out evenly, creating a layer about 1/4 inch thick.

Add Toppings: Sprinkle the granola evenly over the top of the yogurt mixture. If desired, add chopped mixed nuts, dark chocolate chips, and fresh fruit slices for extra flavor and texture.

Freeze the Bark: Place the baking sheet in the freezer for about 4-6 hours, or until the yogurt bark is completely frozen solid.

Cut and Serve: Once frozen, remove the bark from the freezer and lift it out of the baking sheet using the parchment paper. Place it on a cutting board and cut into pieces or break it into shards using your hands.

Storage: Store any leftover pieces in an airtight container in the freezer for up to 2 weeks. Enjoy as a refreshing snack or dessert straight from the freezer!
