Ingredients

For the Chicken Skewers:

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1/2 red bell pepper, cut into 1-inch pieces

1/2 yellow bell pepper, cut into 1-inch pieces

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon black pepper

1 tablespoon sesame seeds (for garnish)

For the Rice:

1 cup jasmine rice

2 cups water or chicken broth

1 tablespoon coconut oil (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Chicken:

    - In a large bowl, whisk together soy sauce, honey, olive oil, minced garlic, ground ginger, and black pepper.

      - Add the chicken cubes and cover the bowl with plastic wrap. Allow it to marinate for at least 30 minutes in the refrigerator (or up to 4 hours for more flavor).

        Prepare the Skewers:

          - If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

            - Preheat your grill or a grill pan over medium heat.

              - Thread the marinated chicken, pineapple cubes, and bell pepper pieces onto the skewers, alternating between chicken and fruit/vegetables.

                Cook the Rice:

                  - Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

                    - In a medium saucepan, combine the rinsed rice and water (or chicken broth) with coconut oil if using. Bring to a boil.

                      - Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the liquid is absorbed and the rice is tender.

                        - Remove from heat and let it sit, covered, for another 5 minutes. Then fluff with a fork and set aside.

                          Grill the Skewers:

                            - Brush the grill or grill pan with a little oil to prevent sticking.

                              - Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F) and has nice char marks on all sides.

                                Serve:

                                  - Serve the hot skewers over a bed of jasmine rice.

                                    - Sprinkle with sesame seeds and chopped cilantro for garnish.

                                      - Garnish with lime wedges on the side for an extra zesty kick.

                                        Enjoy:
