2 cups all-purpose flour

1 cup canned pumpkin puree

1/2 cup brown sugar

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/4 cup cinnamon sugar (for coating)

1 tablespoon milk (optional, for brushing)

Instructions
 

Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, melted butter, brown sugar, granulated sugar, egg, and vanilla extract until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined. Be careful not to overmix; the dough should be slightly sticky but manageable.

          Shape the Dough: Lightly flour your work surface and turn out the dough. With floured hands, divide the dough in half. Roll each half into a rectangle about 1/2 inch thick.

            Cut into Strips: Using a pizza cutter or a knife, cut the dough into strips approximately 1 inch wide. Twist each strip gently and place them on the prepared baking sheet.

              Coat with Cinnamon Sugar: Once all the strips are twisted and placed on the sheet, sprinkle the tops generously with cinnamon sugar.

                Optional Milk Wash: For a golden hue, brush the tops lightly with milk before baking.
