2 cups rolled oats

1 cup pumpkin puree

1/2 cup honey or maple syrup

1/2 cup almond butter (or peanut butter)

1/2 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts, pecans, or almonds)

1/2 cup dried fruit (cranberries, raisins, or apricots)

1/4 cup chocolate chips (optional)

Instructions
 

Preheat and Prepare: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), almond butter, and vanilla extract. Stir until smooth and well integrated.

      Combine Dry Ingredients: In another bowl, mix together the rolled oats, pumpkin pie spice, cinnamon, and salt.

        Incorporate Nuts and Fruits: Gradually add the dry mixture to the wet mixture, stirring to combine. Fold in the chopped nuts, dried fruit, and chocolate chips if using until evenly distributed.

          Spread and Bake: Transfer the mixture to the prepared baking pan. Press it down firmly and evenly with a spatula or your hands to create a compact layer.
