1 cup couscous

1 1/4 cups boiling water or vegetable broth

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Zest and juice of 1 lemon

1/4 cup extra-virgin olive oil

Salt and pepper, to taste

Prepare Couscous: In a medium bowl, combine couscous with boiling water or vegetable broth. Cover and let it sit for about 5 minutes, or until the liquid is absorbed. Fluff the couscous with a fork.

    Mix the Vegetables: In a large mixing bowl, add the halved cherry tomatoes, diced cucumber, red bell pepper, red onion, sliced olives, and chopped herbs (parsley and mint).

      Combine Ingredients: Add the fluffed couscous to the bowl with the vegetables. Gently fold the ingredients together until well combined.
