2 medium-sized beets, washed and trimmed

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons olive oil (plus extra for roasting)

1 tablespoon lemon juice (freshly squeezed)

1 garlic clove, minced

1 teaspoon ground cumin

Salt and pepper, to taste

4 slices of whole-grain bread

Fresh herbs (like parsley or dill) for garnish

Optional toppings: sliced radishes, feta cheese, or sunflower seeds

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Beets: Wrap the beets individually in aluminum foil, drizzling a little olive oil on each. Place them on a baking sheet and roast for about 45-60 minutes, or until they are tender when pierced with a fork.

      Prepare the Beet Hummus: Once the beets are cool enough to handle, peel off their skins and roughly chop them. In a food processor, combine the chopped beets, chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, salt, and pepper.

        Blend until Smooth: Process everything until smooth and creamy. If the mixture is too thick, add a tablespoon of water at a time until you reach your desired consistency. Taste and adjust seasoning if needed.

          Toast the Bread: While the hummus is blending, toast the whole-grain bread slices until golden brown. This can be done in a toaster or on a stovetop griddle.
