1 cup canned pumpkin puree (or roasted fresh pumpkin)

1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons tahini

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Water (as needed for consistency)

Fresh parsley, for garnish

Optional: pumpkin seeds for topping

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic and drizzle with a teaspoon of olive oil. Wrap it in aluminum foil and roast in the oven for about 30-35 minutes, or until the cloves are golden and soft. Allow cooling before squeezing the cloves out of their skins.

    Prepare the Hummus: In a food processor, combine the roasted garlic cloves, pumpkin puree, chickpeas, tahini, olive oil, lemon juice, ground cumin, smoked paprika, and a pinch of salt and pepper.

      Blend Until Smooth: Process the mixture until smooth. If the hummus is too thick, add water, one tablespoon at a time, until you reach your desired consistency.

        Taste and Adjust: Taste your hummus and add more salt, lemon juice, or spices based on your preference. If you enjoy a bit of heat, consider adding a pinch of cayenne pepper.
