Savory Breakfast Sandwich with Sausage & Egg

2 fresh English muffins, split and toasted

2 large eggs

4 oz breakfast sausage (pork or turkey), casings removed

2 slices of cheddar cheese

1/4 cup fresh spinach leaves

2 tbsp mayonnaise

1 tsp Dijon mustard

Salt and pepper, to taste

1 tbsp olive oil

Optional: sliced avocado or tomato for garnish

Instructions
 

Cook the Sausage: In a skillet over medium heat, add the olive oil. Once hot, crumble in the breakfast sausage. Cook for about 5-7 minutes, stirring occasionally until browned and cooked through. Season with salt and pepper. Once cooked, remove from heat and keep warm.

    Fry the Eggs: In the same skillet, reduce the heat to medium-low. Crack in the two eggs, being careful not to break the yolks. Season with salt and pepper. Cook for 3-4 minutes until the whites are set but the yolk remains runny. If you prefer, you can flip them for over-easy eggs.

      Prepare the Sauce: In a small bowl, mix together the mayonnaise and Dijon mustard. This will be the spread for your muffins.

        Assemble the Sandwich: Spread the mayo-Dijon mixture on the bottom half of each toasted English muffin. Layer with fresh spinach, a sausage patty, and a slice of cheddar cheese while the sausage is still warm (this will help melt the cheese). Top with the fried egg and then close the sandwich with the muffin top.

          Serve: Optionally, you can add sliced avocado or tomato on top before closing. Serve warm and enjoy your savory breakfast delight!
