12 oz egg noodles

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz cremini mushrooms, sliced

8 oz shiitake mushrooms, sliced

1 cup vegetable broth

1 tsp soy sauce

1 tsp Worcestershire sauce (optional)

1 tsp Dijon mustard

1 cup sour cream

2 tbsp all-purpose flour

1 tsp smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles:

    In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables:

        In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for 1 additional minute until fragrant.

          Add the Mushrooms:

            Add the sliced cremini and shiitake mushrooms to the skillet. Cook for 7-10 minutes, stirring frequently, until the mushrooms are tender and browned. Season with salt, pepper, and smoked paprika.

              Create the Sauce:

                Sprinkle the flour over the mushroom mixture and stir to coat. Slowly add the vegetable broth, stirring continuously to avoid lumps. Add in the soy sauce, Worcestershire sauce (if using), and Dijon mustard. Allow the mixture to simmer for about 5 minutes until it thickens slightly.
