Savory Sweet Potato and Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and black pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: diced red onion, crumbled feta cheese, hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a large mixing bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, chili powder, salt, and black pepper until evenly coated.

      Roast the Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through.

        Heat the Black Beans: While the sweet potatoes are roasting, prepare the black beans. In a small saucepan over medium heat, warm the black beans for about 5-7 minutes, stirring occasionally. Add salt and pepper to taste.

          Prepare the Tortillas: If using corn tortillas, warm them on a skillet for 30 seconds on each side until pliable. For flour tortillas, you can microwave them for about 15-20 seconds wrapped in a damp towel.

            Assemble the Tacos: On each tortilla, layer a generous spoonful of roasted sweet potatoes, followed by the warm black beans. Top with sliced avocado, fresh cilantro, and any additional toppings you desire.
