14 oz firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

1 cup snap peas

3 green onions, sliced (white and green parts separated)

2 garlic cloves, minced

1-inch piece of fresh ginger, grated

2 tablespoons hoisin sauce

1 tablespoon sesame oil

Cooked rice or quinoa, for serving

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with soy sauce until well-coated. Sprinkle cornstarch over the tofu and toss again until evenly coated.

    Heat the Skillet: In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add tofu cubes and cook until golden brown, about 5-7 minutes, turning occasionally. Remove the tofu from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the white parts of the green onions, minced garlic, and grated ginger. Sauté for about 30 seconds until fragrant.

        Add Veggies: Add the broccoli, red bell pepper, carrot, and snap peas to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are vibrant and slightly tender but still crisp.

          Combine Everything: Return the tofu to the skillet. Pour in hoisin sauce and sesame oil, tossing everything together until well-coated. Cook for another 2-3 minutes until heated through.

            Serve: In a bowl, serve the stir-fry over a bed of cooked rice or quinoa. Garnish with sesame seeds, green parts of the green onions, and fresh cilantro if using.
