2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 cup fresh parsley, chopped

1/4 cup green onions, sliced

Olive oil, for frying

Prepare the Zucchini: In a large bowl, sprinkle the grated zucchinis with salt. Let them sit for about 10-15 minutes to draw out excess moisture. Afterward, use a clean kitchen towel or cheesecloth to squeeze out as much water as possible from the zucchini.

    Mix Ingredients: In a separate bowl, combine the flour, grated Parmesan cheese, eggs, garlic powder, onion powder, smoked paprika, black pepper, chopped parsley, and green onions. Mix until well-combined.

      Combine Zucchini and Batter: Add the drained zucchini to the flour mixture and stir until everything is evenly coated. The batter should hold together but still be a bit loose.
