Ingredients

8 slices of whole grain bread

1 cup cream cheese, softened

1 tablespoon fresh dill, finely chopped

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 large cucumber, thinly sliced

1/4 cup capers (optional, for an extra kick)

Fresh dill sprigs, for garnish

Instructions

Prepare the Cream Cheese Mixture: In a medium bowl, combine the softened cream cheese, chopped fresh dill, lemon juice, garlic powder, salt, and black pepper. Mix well until creamy and fully combined.

Prepare the Bread: Lay out the 8 slices of whole grain bread on a clean surface. Depending on preference, you may remove the crusts for a more refined presentation.

Spread the Mixture: Generously spread the cream cheese mixture on one side of each slice of bread, ensuring an even layer covers the surface.

Layer the Cucumbers: On 4 of the spread slices, layer the thin cucumber slices evenly. If you're using capers, sprinkle them over the cucumbers now for added flavor.

Assemble the Sandwiches: Top the cucumber layers with the remaining 4 slices of bread, cream cheese side down, pressing gently to adhere.

Cut and Serve: Carefully cut each sandwich into quarters or halves, depending on your preference. You can either serve them flat or stand them up for a fun presentation. Garnish each sandwich with a small sprig of fresh dill.

Chill (Optional): If you have time, you can refrigerate the sandwiches for about 30 minutes before serving to allow the flavors to meld and to keep them nice and fresh.
