Simple Fig Quesadillas

4 large whole wheat tortillas

8 oz fresh figs, sliced (approximately 12 figs)

1 cup goat cheese, softened

1 cup shredded mozzarella cheese

2 tablespoons honey

1 tablespoon balsamic glaze

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Salt and pepper, to taste

Prepare the Figs: Begin by washing the figs. Slice each fig into quarters and set aside.

    Make Cheese Mixture: In a mixing bowl, combine the softened goat cheese with the shredded mozzarella. Add a pinch of salt and pepper to taste. Mix well until the cheeses are fully blended.

      Assemble Quesadillas: Take one tortilla and spread a generous layer (about 1/2 cup) of the cheese mixture on one half. Arrange several fig slices over the cheese, then drizzle a teaspoon of honey for added sweetness. Fold the tortilla in half to create a quesadilla. Repeat with the remaining tortillas.

        Heat the Pan: In a large skillet, heat the olive oil over medium heat. Once hot, place a quesadilla in the skillet. Cook for 3-4 minutes until the bottom is golden and crispy.

          Flip and Cook: Carefully flip the quesadilla and cook the other side for another 3-4 minutes until it’s also golden and the cheese is melted.

            Repeat: Remove the cooked quesadilla from the pan and keep warm. Repeat the cooking process with the remaining quesadillas.

              Serve: Cut each quesadilla into wedges. Drizzle with balsamic glaze and additional honey if desired. Garnish with fresh basil leaves for a pop of color and brightness.
