1 medium onion, diced

3 cloves garlic, minced

1 green bell pepper, diced

2 medium carrots, diced

1 can (15 oz) chickpeas, drained and rinsed

1 can (15 oz) pumpkin puree (not pumpkin pie filling)

1 can (14.5 oz) diced tomatoes, with juice

2 cups vegetable broth

2 teaspoons ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon cinnamon

Salt and pepper to taste

Optional toppings: fresh cilantro, avocado, shredded cheese, sour cream, lime wedges

Heat the Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes, until it starts to soften.
