2 cups fresh spinach, washed and chopped

1 cup walnuts, toasted

2 cloves garlic, minced

1/2 cup olive oil

1/4 cup grated Parmesan cheese (plus extra for serving)

Salt and pepper, to taste

Zest of 1 lemon

Juice of 1/2 lemon

Red pepper flakes (optional, for heat)

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the rest and set the spaghetti aside.

    Prepare the Walnut Sauce: In a food processor, combine the toasted walnuts, garlic, olive oil, lemon zest, lemon juice, and a pinch of salt and pepper. Pulse until the mixture is smooth but still slightly chunky, creating a rustic sauce.
