Simple Vegetable Stir-Fry with Tofu

1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil (plus extra for frying)

2 tablespoons vegetable oil (or any neutral oil)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 bell pepper (red or yellow), sliced into thin strips

1 medium carrot, julienned

1 cup broccoli florets

1 cup sugar snap peas, trimmed

1 cup baby corn, halved (optional)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Prepare Tofu: Start by pressing the tofu for at least 15-20 minutes to remove excess moisture. Cut the tofu into evenly sized cubes. Marinate the tofu cubes with 2 tablespoons of soy sauce and let it sit for 10 minutes.

    Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil and 1 tablespoon of sesame oil over medium-high heat.

      Cook Tofu: Once the oil is hot, add the marinated tofu cubes in a single layer. Sauté for about 5-7 minutes, turning occasionally, until the tofu is golden and crisp on all sides. Remove the tofu from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger; stir-fry for about 30 seconds until fragrant.

          Add Vegetables: Add the sliced bell pepper, julienned carrot, broccoli florets, sugar snap peas, and baby corn (if using). Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

            Combine Ingredients: Gently add the crispy tofu back into the skillet with the vegetables. Drizzle with an additional splash of soy sauce and sesame oil to taste. Toss everything together until well combined, ensuring the tofu and veggies are evenly coated.

              Garnish and Serve: Remove the stir-fry from heat. Transfer to a serving dish and garnish with chopped green onions and a sprinkle of sesame seeds. Serve hot over steamed rice or noodles if desired.
