Ingredients

1 lb boneless skinless chicken breasts

1 cup long-grain white rice

6 cups low-sodium chicken broth

1 medium onion, diced

2 carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon ground black pepper

1 teaspoon salt (adjust to taste)

1 tablespoon soy sauce (optional)

1 bay leaf

2 tablespoons fresh lemon juice

1 cup frozen peas

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

Add the Broth: Pour in the low-sodium chicken broth, ensuring the chicken is fully submerged.

Add Vegetables: Scatter the diced onion, sliced carrots, diced celery, and minced garlic into the pot.

Season: Add the dried thyme, black pepper, salt, soy sauce, and bay leaf to the mixture. Stir gently to combine.

Rice Layer: Sprinkle the long-grain white rice evenly over the top of the soup ingredients.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 4 hours.

Check for Doneness: Once the cooking time is up, remove the chicken breasts and shred them with two forks. Return the shredded chicken to the pot.

Add Final Ingredients: Stir in the frozen peas and fresh lemon juice, mixing well. Let it cook for an additional 15-20 minutes on low until the peas are heated through.

Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley. Enjoy your cozy bowl of comfort!
