1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

4 cups chicken broth

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Tortilla strips, for serving

Avocado slices, for garnish (optional)

Shredded cheese, for serving (optional)

Instructions
 

Prepare the Ingredients: Begin by dicing the onion, bell pepper, jalapeño, and mincing the garlic. Set aside.

    Layer the Soup: In the slow cooker, layer the diced onion, bell pepper, garlic, and jalapeño. Place the chicken breasts on top.

      Add Vegetables and Spices: Pour in the canned diced tomatoes (with their juice), black beans, and corn. Add the chicken broth, ground cumin, smoked paprika, chili powder, salt, and pepper. Stir gently to combine, making sure to keep the chicken breasts at the bottom.
