Slow-Cooker Hatch Chili Pork Tacos

2 lbs pork shoulder, cut into large chunks

4 Hatch green chiles, roasted, peeled, and diced (or 1 can of diced green chiles if out of season)

1 medium onion, diced

4 cloves garlic, minced

1 cup low-sodium chicken broth

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Corn or flour tortillas (for serving)

Optional toppings: avocado slices, diced tomatoes, crumbled queso fresco, sour cream

Instructions
 

Prepare the Pork: In a slow cooker, place the pork shoulder chunks. Season with salt, black pepper, cumin, smoked paprika, and oregano. Toss to coat the meat evenly with the spices.

    Add Aromatics: Add the diced onion and minced garlic directly over the pork.

      Incorporate Hatch Chiles: Stir the roasted and diced Hatch chiles into the slow cooker mixture. If using canned chiles, simply pour them in.

        Add Liquid: Pour the chicken broth over all the ingredients. Squeeze the lime juice on top for an added zesty kick.
