1 cup carrots, diced

1 cup celery, diced

2 cups fresh spinach or kale

1 tsp dried oregano

1/2 tsp crushed red pepper flakes (optional)

1 lemon, zested and juiced (for brightness)

Prepare the Meatballs: In a medium bowl, combine the ground beef or sausage, chopped onion, garlic, Parmesan cheese, parsley, egg, salt, and black pepper. Mix well until combined and form into small meatballs (about 1 inch in diameter).
