1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

2 cups vegetable broth

2 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup corn kernels (fresh, frozen, or canned)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Plain yogurt or sour cream (optional, for serving)

Instructions

Prep the vegetables: Start by peeling and dicing the sweet potatoes into small cubes. Chop the onion, bell pepper, and mince the garlic.

Combine ingredients in the slow cooker: In your slow cooker, layer the diced sweet potatoes, black beans, diced tomatoes (with juices), onion, garlic, bell pepper, and corn.

Season the chili: Add the vegetable broth, ground cumin, smoked paprika, chili powder, cayenne pepper, and a pinch of salt and pepper to taste. Stir everything together until well combined.

Cook the chili: Set the slow cooker on low heat and cook for 6-8 hours, or on high for 3-4 hours. Check periodically and give it a stir to blend the flavors.

Adjust seasoning: Once the cooking time is done, taste the chili and adjust seasoning with more salt, pepper, or lime juice if needed.

Serve: Ladle the chili into bowls and top with fresh cilantro and avocado slices. If desired, add a dollop of plain yogurt or sour cream for creaminess.

Enjoy the warm, hearty flavors packed in this sweet potato and black bean chili perfect for chilly evenings!
