1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2 tablespoons adobo sauce (from chipotle peppers)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

1 small onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

8 small corn or flour tortillas

1 cup fresh cilantro, chopped

1 cup red cabbage, shredded

1 avocado, diced

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, adobo sauce, smoked paprika, garlic powder, cumin, salt, and black pepper. Add the chicken thighs and coat them evenly with the marinade. Let it marinate for at least 30 minutes (up to 2 hours for deeper flavor).

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs and sear until browned, about 4-5 minutes per side. Once cooked through, remove the chicken from the skillet and let it rest for 5 minutes.

      Prepare the Sauce: In the same skillet, add the chopped onion and sauté for about 3 minutes until softened. Add the minced garlic and cook for another minute until fragrant. Pour in the chicken broth, scraping any bits off the bottom of the skillet to deglaze it.

        Shred the Chicken: Once the broth is simmering, return the chicken to the skillet. Reduce the heat to low, cover, and let it cook for an additional 10 minutes. Remove the chicken and shred it using two forks.

          Assemble the Tacos: Warm the tortillas in a dry skillet or microwave. On each tortilla, layer shredded chicken, fresh cilantro, shredded red cabbage, and diced avocado.

            Serve: Squeeze fresh lime juice over the top of each taco and serve immediately with any additional toppings you desire, like salsa or sour cream.
