Spicy Buffalo Tofu Wraps

1 block (14 oz) firm tofu, pressed and drained

1/2 cup buffalo sauce (store-bought or homemade)

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1/2 cup non-dairy milk (or regular milk)

4 large whole wheat tortillas (or your favorite wraps)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup sliced red onion

1/2 cup vegan ranch dressing (or regular ranch dressing)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Tofu: Start by cutting the pressed tofu into bite-sized cubes. Pat the cubes dry with a paper towel to remove excess moisture.

    Coating the Tofu: In a shallow bowl, mix the flour, garlic powder, onion powder, salt, and black pepper. In a separate bowl, pour the non-dairy milk. In a third bowl, place the panko breadcrumbs.

      Breading Process: Dip each tofu cube first in the flour mixture, then the non-dairy milk, and finally coat it with the panko breadcrumbs. Set aside on a plate.

        Frying the Tofu: Heat about 1/4 cup of oil in a frying pan over medium-high heat. Once hot, add the breaded tofu cubes and fry until golden brown and crispy on all sides, about 3-5 minutes per side. Work in batches if necessary. Remove and drain on paper towels.

          Buffalo Sauce Coating: In a large mixing bowl, toss the crispy fried tofu cubes with the buffalo sauce until fully coated.

            Assemble the Wraps: Warm the tortillas in a separate skillet or microwave for a few seconds until pliable. Lay each tortilla flat and spread a generous amount of vegan ranch dressing in the center of each.

              Add Fillings: Layer shredded lettuce, diced tomatoes, sliced red onion, and the spicy buffalo tofu on top of the ranch dressing.

                Wrap It Up: Fold in the ends of the tortilla and then roll it up tightly from the bottom to the top. Repeat for the remaining wraps.

                  Final Touch: Slice each wrap diagonally in half and garnish with fresh cilantro or parsley if desired.

                    Serve: Serve immediately with extra buffalo sauce on the side for dipping, or store in the fridge for up to 2 days.
