Spicy Chickpea and Sweet Potato Stew

1 cup dried chickpeas (or 2 cans of chickpeas, drained and rinsed)

1 large sweet potato, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 can (14 oz) diced tomatoes (with their juices)

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Squeeze of lime juice (optional)

Prepare Chickpeas: If using dried chickpeas, soak them in water overnight. Drain and rinse. Cook them in a pot of boiling water for about 1 hour, or until tender. Drain and set aside. If using canned chickpeas, simply drain and rinse them.

    Sauté Aromatics: In a large heavy pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Then add the minced garlic and red bell pepper, and cook for an additional 3-4 minutes, stirring until the vegetables are tender.

      Add Spices: Stir in the ground cumin, smoked paprika, cayenne pepper, and dried oregano. Cook for another minute until the spices are fragrant.

        Add Sweet Potato: Mix in the diced sweet potato and stir well to coat the sweet potato with the spices. Cook for about 5 minutes.

          Combine Remaining Ingredients: Pour in the diced tomatoes and vegetable broth, and stir in the cooked chickpeas. Season with salt and pepper to taste.

            Cook the Stew: Bring the mixture to a boil, then reduce to a simmer. Cover the pot and let it cook for about 30 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking.

              Adjust Seasoning: Taste the stew and adjust the seasoning, adding more salt, pepper, or cayenne if preferred.
