14 ounces firm tofu, pressed and cubed

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

4 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon soy sauce

1 tablespoon sriracha (or more, to taste)

1/4 cup creamy peanut butter

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

Cooked rice or quinoa, to serve

Crushed peanuts and sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Tofu: After pressing the tofu to remove excess moisture, cut it into 1-inch cubes. Heat the vegetable oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the tofu cubes and cook until golden brown on all sides, about 6-8 minutes. Remove the tofu from the pan and set aside.

    Stir-Fry the Vegetables: In the same pan, add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 4-5 minutes, or until the vegetables are vibrant and slightly tender but still crisp. Add the chopped white parts of the green onions, minced garlic, and ginger, and stir-fry for an additional 1-2 minutes until fragrant.

      Make the Sauce: In a small bowl, whisk together the soy sauce, sriracha, peanut butter, rice vinegar, honey (or maple syrup), and sesame oil until smooth.

        Combine Tofu and Sauce: Return the crispy tofu to the skillet with the vegetables. Pour the peanut sauce over the stir-fry and gently toss everything together to coat evenly. Stir-fry for another 1-2 minutes to heat through and allow the sauce to thicken slightly.

          Serve: Divide the cooked rice or quinoa among serving bowls. Spoon the spicy peanut tofu stir fry over the grains. Garnish with crushed peanuts, sesame seeds, the green parts of the green onions, and fresh cilantro if desired.
