1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

½ cup soy sauce (low sodium if preferred)

¼ cup brown sugar

2 tablespoons rice vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)

Freshly ground black pepper to taste

1 head of butter or romaine lettuce, leaves separated and washed

½ cup shredded carrots

¼ cup chopped green onions

Sesame seeds for garnish

Optional: sliced red chili for a spicy kick

Prepare the Teriyaki Sauce: In a medium bowl, whisk together the soy sauce, brown sugar, rice vinegar, honey, minced garlic, and grated ginger until the sugar dissolves.

    Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and season with black pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.

      Add the Sauce: Pour the prepared teriyaki sauce over the cooked chicken. Stir well to coat the chicken evenly.

        Thicken the Sauce: Bring the mixture to a gentle boil, then add the cornstarch slurry. Stir continuously until the sauce thickens (about 2-3 minutes). Remove from heat.
