2 cups fresh strawberries, hulled and diced

1/4 cup granulated sugar (adjust based on berry sweetness)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon cornstarch

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup honey or maple syrup

Prep the Strawberries: In a medium bowl, combine the diced strawberries, granulated sugar, lemon juice, vanilla extract, and cornstarch. Toss gently to coat and set aside to macerate for about 15 minutes.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal later.

      Make the Crust and Topping: In a large bowl, mix together rolled oats, flour, brown sugar, baking powder, and salt. Pour in the melted butter and honey (or maple syrup), and stir until the mixture resembles coarse crumbs. Use your hands if necessary to fully incorporate the butter.

        Layer the Ingredients: Press half of the oat mixture firmly into the prepared baking dish to form a base. Spread the strawberry mixture evenly over the crust, ensuring it is well distributed. Crumble the remaining oat mixture on top, covering the strawberries as evenly as possible.
