1 medium spaghetti squash

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup grated mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Prepare the Spaghetti Squash:

    - Preheat your oven to 400°F (200°C).

      - Slice the spaghetti squash in half lengthwise and scoop out the seeds.

        - Drizzle the insides with olive oil, and season with salt and pepper.

          - Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-40 minutes, or until the flesh is tender and easily scraped with a fork.

            Cook the Turkey Marinara Filling:

              - In a large skillet over medium heat, add a splash of olive oil.

                - Sauté the diced onion for about 3-4 minutes until it becomes translucent, then add in the minced garlic and cook for an additional minute.

                  - Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.

                    - Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, and season with salt and pepper. Let the mixture simmer for about 10 minutes to allow the flavors to meld.

                      Combine and Stuff:

                        - Remove the roasted spaghetti squash from the oven and let it cool slightly.

                          - Use a fork to scrape the flesh into spaghetti-like strands, leaving the shells intact.

                            - In a large bowl, combine the spaghetti squash strands with the turkey marinara mixture. Mix well so that the squash is evenly coated.

                              Bake the Stuffed Squash:

                                - Preheat your oven to 375°F (190°C).

                                  - Spoon the turkey and spaghetti squash mixture back into the hollowed-out squash shells.

                                    - Top each filled squash with mozzarella and Parmesan cheese.

                                      - Place the stuffed squash back in the oven and bake for 20-25 minutes, or until the cheese is bubbling and golden brown.

                                        Serve:

                                          - Once cooked, remove the stuffed spaghetti squash from the oven.

                                            - Garnish with fresh basil leaves before serving.
