2 cups fresh corn kernels (about 4 ears of corn)

1 cup crumbled feta cheese

1/2 cup Greek yogurt

1/4 cup mayonnaise

1/2 red bell pepper, finely diced

2 green onions, thinly sliced

1 small jalapeño, seeded and minced (optional for a kick)

Juice of 1 lime

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for about 3-5 minutes until tender. Drain and let it cool. Alternatively, you can grill the corn on the cob until slightly charred for extra flavor.

    Mix the Base: In a mixing bowl, combine the Greek yogurt and mayonnaise. Stir until smooth.

      Add Flavors: Mix in the crumbled feta cheese, lime juice, garlic powder, cumin, salt, and pepper. Blend until combined but still slightly chunky.

        Incorporate Veggies: Fold in the fresh corn kernels, diced red bell pepper, green onions, and minced jalapeño (if using) into the creamy mixture. Mix gently to evenly distribute.

          Taste and Adjust: Taste the dip and adjust the seasoning with more salt, pepper, or lime juice as needed.
