1 pound breakfast sausage (mild or spicy, according to preference)

8 miniature slider buns

4 large eggs

1 cup shredded cheddar cheese

½ cup maple syrup

1 tablespoon Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Prepare the Sausage: In a large skillet over medium heat, crumble the breakfast sausage and cook until browned and fully cooked (about 8-10 minutes). Break it into small pieces as it cooks. Use a slotted spoon to transfer the sausage to a plate lined with paper towels to drain excess grease.

    Scramble the Eggs: In the same skillet, reduce the heat to low and crack the eggs into the pan. Whisk them with a fork, adding a pinch of salt and pepper. Scramble until just set, stirring occasionally (about 3-4 minutes). Remove from heat.

      Toast the Buns: Cut each slider bun in half. In a separate skillet, add olive oil and heat over medium. Lightly toast the cut sides of the buns in the skillet until golden brown (about 1-2 minutes).
