14 oz firm tofu, drained and pressed

2 tablespoons cornstarch

2 tablespoons vegetable oil (divided)

1 medium bell pepper (red or green), sliced

1 medium onion, sliced

2 cloves garlic, minced

1 cup pineapple chunks (fresh or canned)

1 cup broccoli florets

½ cup snap peas

3 green onions, sliced (for garnish)

For the Sauce:

¼ cup soy sauce

¼ cup rice vinegar

¼ cup ketchup

2 tablespoons brown sugar

1 tablespoon sesame oil

1 teaspoon ginger paste

1 teaspoon garlic powder

1 teaspoon chili flakes (optional, for heat)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with cornstarch until evenly coated. This gives the tofu a crispy texture when cooked.

    Make the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, sesame oil, ginger paste, garlic powder, and chili flakes. Set aside.

      Cook the Tofu: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the tofu cubes in a single layer. Cook for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the pan and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and garlic, stir-frying for 2-3 minutes until fragrant. Next, add the bell pepper, pineapple chunks, broccoli florets, and snap peas. Stir-fry for another 5-6 minutes until the vegetables are tender-crisp.

          Combine Everything: Return the crispy tofu to the skillet with the vegetables. Pour the sauce over the stir-fry, gently tossing everything together to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.

            Serve: Serve the sweet and sour tofu stir fry hot, garnished with sliced green onions. This dish pairs well with steamed rice or quinoa.
