2 (20 oz) cans young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon cayenne pepper (adjust to taste)

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

Salt and pepper, to taste

12 slider buns

Fresh coleslaw (for topping)

Fresh cilantro leaves (for garnish, optional)

Instructions
 

Prepare the Jackfruit: Begin by cutting the jackfruit into smaller pieces, ensuring any seeds are removed. Use your hands to shred the jackfruit into smaller strands, resembling pulled pork.

    Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Spices: Sprinkle in the smoked paprika, cumin, and cayenne pepper. Stir well to coat the onions and garlic with the spices, then let it cook for another minute.

        Incorporate Jackfruit: Add the shredded jackfruit to the skillet. Stir the mixture well, ensuring the jackfruit is coated with all the spices.

          Simmer with BBQ Sauce: Pour in the barbecue sauce and apple cider vinegar. Stir to combine, then reduce the heat to low. Cover and let it simmer for about 20 minutes, stirring occasionally. The jackfruit should become tender and easily fall apart.

            Season to Taste: After simmering, taste the mixture and season with salt and pepper as needed. If you prefer it spicier, add more cayenne or your favorite hot sauce.
