Sweet Apple Oat Cups with Raisins

2 cups rolled oats

1 ½ cups unsweetened almond milk (or milk of choice)

2 medium apples, peeled and diced

½ cup raisins

1/3 cup maple syrup (or honey)

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon vanilla extract

¼ teaspoon salt

¼ cup chopped walnuts (optional)

Optional toppings: yogurt, fresh apple slices, additional walnuts, or a drizzle of maple syrup

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it with a little oil or lining it with muffin liners for easier removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and salt. Mix well ensuring all dry ingredients are evenly distributed.

      Combine Wet Ingredients: In another bowl, mix the almond milk, maple syrup, and vanilla extract until thoroughly combined.

        Combine Everything Together: Pour the wet mixture into the bowl with the dry ingredients. Add in the diced apples and raisins, stirring gently until everything is well coated and mixed.

          Add Nuts (if using): If you'd like, fold in the chopped walnuts for an added crunch and flavor.

            Fill Muffin Tin: Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.

              Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.

                Cool & Serve: Once they are done, remove them from the oven and let the oat cups cool in the tin for about 10 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature with your favorite toppings like yogurt, extra apple slices, or a drizzle of maple syrup.
