Ingredients

4 slices of whole grain bread

2 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

2 tablespoons unsalted butter

2 tablespoons brown sugar (or coconut sugar for a healthier option)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped pecans or walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

1/2 cup Greek yogurt or cream cheese for topping (optional)

Honey or maple syrup for drizzling (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare Bread Cups: Use a rolling pin to flatten each slice of bread. Then, use a round cookie cutter or the rim of a glass to cut out circles from each slice. You will need two circles per toast cup.

Shape the Toast Cups: Lightly grease a muffin tray with butter or cooking spray. Carefully press each bread circle into the muffin cups to form a cup shape, ensuring they create the base and sides of the cups. Bake in the preheated oven for about 8-10 minutes or until golden and crisp.

Cook the Apple Filling: In a medium skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and cook while stirring frequently for about 5-7 minutes, or until the apples are soft and coated in the sugary mixture.

Add Nutritious Boost: If using, stir in the chopped nuts and dried fruits, allowing them to warm through for another minute or two. Remove the skillet from heat.

Assemble Toast Cups: Once the bread cups are ready, carefully remove them from the muffin tray. Fill each toast cup generously with the apple mixture.

Serve & Top: If you like, top each cup with a dollop of Greek yogurt or cream cheese. Drizzle over some honey or maple syrup to add extra sweetness if desired.

Enjoy! Serve immediately while warm for the best flavor and texture.
