1 cup rolled oats

1/2 cup almond butter (or any nut butter of choice)

1/2 cup protein powder (vanilla or unflavored)

1/3 cup honey or maple syrup

1 cup fresh blueberries (or frozen, thawed)

1/4 cup chia seeds

1/4 teaspoon salt

1 teaspoon vanilla extract

Optional: 1/4 cup shredded coconut or chopped nuts for added texture

Instructions
 

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, protein powder, chia seeds, and salt. Stir well to ensure everything is evenly distributed.

    Add the Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until it becomes a smooth mixture.

      Combine: Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined. The mixture should be sticky and hold together; if it’s too dry, add a little water or more nut butter.

        Fold in Blueberries: Gently fold the blueberries into the mixture, being careful not to crush them, as you want to keep some whole for a burst of flavor in each bite.

          Shape the Bites: Using your hands, take about a tablespoon of the mixture and roll it into a ball. Place the protein bites onto a parchment-lined baking sheet. Repeat until all the mixture is used up.

            Chill: Place the baking sheet in the refrigerator for about 30 minutes to allow the bites to firm up.
