2 cups jasmine rice

4 salmon fillets (about 6 ounces each)

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ginger powder

1/2 teaspoon black pepper

1 avocado, sliced

1 cup shredded carrots

1 cucumber, thinly sliced

1/4 cup chopped fresh cilantro

2 green onions, sliced

Sesame seeds for garnish

Lime wedges for serving

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. Cook according to package instructions, typically using a 1:1.5 rice-to-water ratio—bring water to a boil, then cover and simmer for about 15 minutes. Once done, fluff with a fork and set aside.

    Marinate the Salmon: In a small bowl, mix together the sweet chili sauce, soy sauce, sesame oil, garlic powder, ginger powder, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over the fish. Let it marinate for at least 15 minutes, allowing the flavors to meld.

      Cook the Salmon: Heat olive oil in a skillet over medium-high heat. Remove the salmon from the marinade (reserve the marinade) and add the fillets to the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Drizzle the reserved marinade over the salmon during the last minute of cooking.
