Ingredients

1 cup all-purpose flour

1 cup cornmeal

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1/3 cup honey

2 large eggs

1/4 cup unsalted butter, melted

Extra butter for greasing the pan

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease an 8x8 inch square baking dish or a cast-iron skillet with extra butter.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until thoroughly combined.

Combine Wet Ingredients: In another bowl, mix the buttermilk, honey, eggs, and melted butter together until well blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. The batter should be slightly lumpy.

Bake the Cornbread: Pour the batter into the prepared baking dish or skillet. Bake for about 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Prepare the Honey Butter: While the cornbread bakes, prepare the honey butter. In a small bowl, mix 1/2 cup softened butter with 1/4 cup honey until smooth and well combined. You can adjust the honey to taste.

Cool and Serve: Once the cornbread is done baking, remove it from the oven and allow it to cool for about 10 minutes. Slice into squares and serve warm with a generous dollop of honey butter on top.
