2 cups old-fashioned rolled oats

1 cup mixed nuts (almonds, walnuts, cashews), roughly chopped

1/2 cup sunflower seeds

1/2 cup honey or maple syrup (for a vegan option)

1/4 cup almond butter or peanut butter

1/4 cup brown sugar (optional, for extra sweetness)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

1/2 cup chocolate chips (optional, but highly recommended!)

Instructions
 

Prep the Pan: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides for easier removal later.

    Toast the Oats and Nuts: Spread the rolled oats and chopped nuts evenly on a baking sheet. Toast them in the preheated oven for 10-12 minutes, stirring halfway through until they are lightly golden and fragrant. Remove from the oven and let cool slightly.

      Combine Wet Ingredients: In a medium saucepan over low heat, combine the honey (or maple syrup), almond butter, brown sugar, vanilla extract, cinnamon, and salt. Stir gently until the mixture is well combined and warm, but not boiling.

        Mix Dry Ingredients: In a large mixing bowl, combine the toasted oats, nuts, sunflower seeds, dried fruit, and chocolate chips. Stir until everything is evenly dispersed.

          Combine Mixtures: Pour the warm honey-nut mixture over the dry ingredients. Using a rubber spatula or wooden spoon, mix until everything is well coated and combined.

            Press into Pan: Transfer the mixture into the prepared baking pan. Using the back of a spatula or your hands, firmly press the mixture down to create a compact layer. Make sure it’s tightly packed so the bars hold together.

              Chill and Set: Allow the granola mixture to cool at room temperature for about 30 minutes. Then, refrigerate it for at least 2 hours to set completely.

                Cut into Bars: Once the granola has firmed up, lift it out of the pan using the parchment paper overhang. Place it on a cutting board and cut into bars or squares of your desired size.

                  Store: Store the granola bars in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.
