2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup fresh spinach or arugula

1/2 cup crumbled feta or cotija cheese

Fresh lime wedges for serving

Fresh cilantro for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Sweet Potatoes: In a large mixing bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, garlic powder, cayenne pepper (if using), salt, and pepper. Spread them evenly on a baking sheet and roast for about 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through.

      Prepare the Black Beans: While the sweet potatoes are roasting, heat a small saucepan over medium heat. Add the rinsed black beans to the saucepan, season with a pinch of salt and pepper, and heat through for about 5-7 minutes, stirring occasionally.
