2 medium sweet potatoes, peeled and diced

1 cup cooked black beans, drained and rinsed

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 large eggs

2 tablespoons olive oil

4 whole grain tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, cumin, chili powder, smoked paprika, salt, and pepper in a bowl until evenly coated. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

    Sauté the Vegetables: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for 5 minutes until the onion becomes translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Stir in the roasted sweet potatoes and black beans into the skillet. Mix gently to combine, letting everything warm through for about 3-5 minutes. Season with additional salt and pepper if needed.

        Prepare the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the vegetable mixture, and cook, stirring gently, until the eggs are set and cooked through, about 3-4 minutes.

          Assemble the Wraps: Warm the tortillas in a dry skillet or microwave. Spoon the sweet potato and egg mixture evenly onto each tortilla, then fold in the sides and roll them up tightly.
