Sweet Potato Nacho Casserole

2 large sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper, to taste

1 can black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small red onion, diced

1 jalapeño, diced (optional, for spice)

1 cup shredded sharp cheddar cheese

1 cup avocado (or guacamole), for topping

Fresh cilantro, for garnish

1 lime, cut into wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread the sweet potatoes in a single layer on a baking sheet.

      Roast the Sweet Potatoes: Roast the sweet potatoes in the preheated oven for about 25 minutes, or until they are tender and slightly caramelized, flipping halfway through.

        Sauté the Vegetables: While the sweet potatoes are roasting, heat a skillet over medium heat. Add a splash of olive oil, and sauté the diced red onion and bell pepper for 5-7 minutes until softened. If using, add the jalapeño and cook for an additional 2 minutes.

          Combine Ingredients: In a large mixing bowl, combine the roasted sweet potatoes, sautéed vegetables, black beans, and corn. Mix well until everything is evenly distributed.

            Layer in Casserole Dish: Transfer the mixture into a greased 9x13-inch casserole dish. Spread it out evenly.

              Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the mixture.

                Bake the Casserole: Bake in the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                  Serve: Once baked, remove from the oven and let it cool for a few minutes. Top with diced avocado (or guacamole) and garnish with fresh cilantro. Serve with lime wedges on the side.
